Recipe: CBD Crockpot Chicken Caesars
Now that summer is around the corner, we know that pretty much means that we’re running all day long. So, when you are looking for a quick and easy dinner that will leave you wanting seconds… look no further than these CBD Crockpot Chicken Caesars. They are a snap to make and the homemade CBD Caesar dressing is packed with protein!

Ingredients
Chicken
- 1 ½ lbs boneless, skinless chicken breasts
- 2 tbsp water
- 1 tsp kosher salt
- ½ tsp garlic powder
- ¼ tsp black pepper
Dressing
- 2 – 5.3ounce containers nonfat plain Greek yogurt
- 1 tsp CBD isolate powder
- ½ c shredded Parmesan cheese
- 2 tbsp fresh lemon juice
- 1 ½ tbsp smooth Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tbsp reduced sodium soy sauce
- ½ tsp garlic powder
- ½ tsp kosher salt
- ¼ tsp black pepper
For Serving
- Chopped fresh flat leaf Italian parsley
- ½ c shredded Parmesan cheese
- Whole wheat buns or whole wheat pita pockets
- Romaine lettuce
Directions
- Place chicken in slow cooker and add water
- Sprinkle salt, garlic powder, and black pepper on chicken
- Cook for 4-5 hours on high, or 5-6 hours on low… until chicken is thoroughly cooked but still moist and fall-apart tender.
- Meanwhile, to make the dressing stir together Greek yogurt, CBD isolate powder, Parmesan cheese, lemon juice, mustard, vinegar, soy sauce, garlic powder, salt, and pepper. Mix until all ingredients are thoroughly combined. (Make ahead of time and refrigerate for convenience)
- Near the end of cooking, about 30 minutes before serving… check the chicken to ensure it’s fully cooked and then shred cooked chicken using two forks.
- Stir Caesar dressing into chicken in the crockpot and continue cooking for about 30 minutes.
- Immediately before serving, stir in fresh parsley and remaining Parmesan cheese
- Serve on whole wheat buns or in whole wheat pita pockets with Romaine lettuce, and garnish with additional Parmesan cheese, if desired.
